Brisbane Festival - Light Sphere

This afternoon I went for a walk through the city, Botanical Gardens, and across the river to Southbank. I was surprised to find this interesting piece of art that was put together as part of the Brisbane Festival. A sphere of disc shaped mirrors, mounted on white pebbles, with a border of multi-colored lights that morph and pulse slowly. The most attractive aspect of this was the extremely soothing music and sounds playing from the centre of he sphere. The sounds were ambient and warm, rhythmic like a heart beat, like the soundtrack of a science fiction scene. I found myself in a trance, and after 20 minutes or so I felt I could go to sleep. The warm/cool spring air, the setting sun, and this light sphere, all elements blending into a feeling of hypnotic relaxation :) haha. I could have laid down by it an had a good nap.

Poached Pears

Last week at work I was surprised to find Pears were sent along with our food delivery. We didn't order them as they have been out of stock for a while. I assume they are back in season locally, so we were fortunate to have some this time.
I decided to do something different with the pears, something I was almost certain most of the workers had never tried before. Poached Pears are a very basic delight and commonly known among civilized foodies. However, keep in mind, I work in the outback, with not-so-civilized.... "blokes" if you will.

The Pears went down well and were a more healthy dessert option than the previous night's Mud Cake.

Birthday Cake

There is a young man who calls himself "Ping", who we cater for at our camp. It was his 26th birthday last Saturday. He asked if we could bake him a cake, in a very rude shape which I wont repeat here. I thought about his request, and in the end decided to bake him a normal shaped Chocolate Mud Cake with Dark Chocolate and White Chocolate Icing.

HomeMade Calzone

This hitch was an easy one. We had around 9-12 people in our camp for three weeks!.. Very Unusual
Myself and Tim (another chef) had only to prepare 2 snack meals, and two main meals. I was preparing afternoon snacks and Dinner only. I felt fortunate for having such an easy time at work. Normally I would be preparing three times more food than this in a day, so this time I could relax and prepare food that I wouldn't normally make. I had time to enjoy cooking.

One night, for dinner, I baked Calzones with fresh homemade dough.
I was pleased with the result.

 Fresh Dough, Rolled.
Bolognese Sauce with Salami, Olives, Anchovies, Capsicum, Cherry Tomatoes and Cheese.
 Sealed and Brushed with Egg.
 Fresh out of the Oven.
And Served.

PineApple Upside-Down Cake

I baked a Pineapple upside-down cake at work. Served with whipped cream :)
It was popular.
